Honey is very low in moisture as well as very acidic, these are two major defenses that prevent the bad bugs from spoiling food. Archaeologists have reported finding honey in pots that were thousands of years old that was still edible.
Pure sugar, salt and dried rice are also said to have similar shelf lives if kept dry.
